
Tofu Fish Over Rice

Rice:
100 g ~ ½ cup rice
240 ml ~ 1 cup water
¼ tsp salt
Tofu Fish:
200 g firm tofu
20 g potato starch
1 sheet nori
¼ tsp salt
½ tbsp olive oil for frying
Sauce:
15 ml water
15 ml soy sauce
20 ml maple or agave syrup
Optional Garnish:
sesame seeds

7 oz firm tofu
2 tbsp potato starch
1 sheet nori
¼ tsp salt
½ tbsp olive oil for frying

1 tbsp water
1 tbsp soy sauce
1 tbsp maple or agave syrup

sesame seeds

Steps

1Rinse rice really well under running water.

2Add rinsed rice to a small cooking pot (20 cm ~ 8 inch, preferably cast iron).

3Add water and bring to a boil. Stir once. Reduce heat to very low (induction #2), close the lid and let simmer for 15 minutes - or until rice is soft and completely cooked through. Turn off the heat and let it sit, covered, for another 5 minutes. Fluff it up with a fork or a spatula. Set aside.

4In the meantime, make tofu fish. Add tofu to a mini food processor.

5Blend into paste ~ 30 seconds.

6Transfer the paste to a small mixing bowl. Add cornstarch and salt.

7Mix well to combine and set aside.

8Cut nori sheet in four and place on a flat clean surface or a sheet of baking paper.

9Split the tofu mix into four portions and spread over the nori.

10Flatten with your hands or a spoon and fold the edges in.

11Add to a lightly oiled frying pan, preferably cast iron. Set heat to medium-high (induction #6).

12Fry for 3 minutes or until golden brown.

13Flip over and fry for another 3 minutes or until golden brown.

14In the meantime, make the sauce. Add soy sauce, water and syrup to a jar or a bowl. Mix to combine. You can make as much sauce as you want by simply keeping the 1:1:1 ratio.

15Add rice to plates.

16Top with tofu fish.

17Drizzle with the sauce and sprinkle with sesame seeds.
