Sweet Potato With Chickpeas

500 g ~ 1 large sweet potato
2 tbsp fresh parsley

Chickpeas:
240 g ~ 1 can cooked chickpeas
60 ml plain yogurt | soy, oat or cashew
10 ml agave or maple syrup
1 tsp lemon juice or vinegar
½ tsp garlic powder
½ tsp salt
¼ tsp turmeric powder

8 oz ~ 1 can cooked chickpeas
¼ cup plain yogurt | soy, oat or cashew
2 tsp agave or maple syrup
1 tsp lemon juice or vinegar
½ tsp garlic powder
½ tsp salt
¼ tsp turmeric powder

Steps
1Preheat the oven to 200°C (400°F). Line a baking sheet with baking paper. Cut the potato in half and place it on the sheet.
2Bake for 45–60 minutes, or until soft and fully cooked.
3In the meantime, prepare the chickpeas. Rinse and drain cooked chickpeas. Add rinsed chickpeas, yogurt, syrup, lemon juice (or vinegar), garlic powder, turmeric powder, and salt to a small mixing bowl.
4Mix and mash to desired consistency.
5Once the sweet potatoes are cooked, add them to plates.
6Gently mash the inside with a fork.
7Spoon the chickpea mash over each potato.
8Garnish with fresh parsley and sprinkle with ground black pepper to taste.
