
Mince Salad

150 g mixed greens
2 medium cucumbers, sliced (optional)

Mince:
120 g dry soy mince
400 g chopped tomatoes
20 ml agave or maple syrup
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
Yogurt Mayo:
200 g plain yogurt | soy, oat or cashew
1 tsp vinegar, any
¼ tsp salt

4 oz dry soy mince
14 oz chopped tomatoes
1 tbsp agave or maple syrup
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
Yogurt Mayo:
7 oz plain yogurt | soy, oat or cashew
1 tsp vinegar, any
¼ tsp salt

Steps

1Prepare the mince. If using dry plant-based mince, rinse it thoroughly under running water using a sieve to rehydrate it. Shake the sieve well to drain excess water. Skip this step if using ready-to-eat plant-based mince.

2Add mince, canned tomatoes, syrup, onion powder, garlic powder, and salt to a small saucepan.

3Stir-fry over low heat for 2-3 minutes, stirring occasionally, until heated through. Set aside.

4Make the Yogurt Mayo. Add yogurt, vinegar, and salt to a small mixing bowl.

5Whisk to combine. Set aside.

6Add mixed greens and cucumbers (if using) to a serving bowl.

7Drizzle with yogurt mayo.

8Top with cooked mince.

9Sprinkle with crushed walnuts (if using), garnish with fresh dill, and season with ground black pepper to taste.
