Lentil Puree With Peas

Ingredients

240 g ~ 1 can cooked lentils
60 ml soy milk
1 tsp salt
1 tsp onion powder
½ tsp garlic powder
¼ tsp ground cumin

Optional Protein Boost:
30 g plain pea protein
30 ml soy milk

Topping:
60 g green peas, canned or frozen
1 tbsp fresh parsley
1 pinch ground black pepper

2 tbsp soy milk

2 oz green peas, canned or frozen
1 tbsp fresh parsley
1 pinch ground black pepper

Steps
1Rinse and drain the lentils, then add them to a small blender cup.
2Add soy milk, salt, onion powder, garlic powder, and ground cumin.
3Blend until smooth. For an optional protein boost, add the protein powder and a little extra soy milk, then blend again.
4Divide the puree between two plates and spread it out with the back of a spoon.
5If using frozen peas, defrost them first. To do this quickly, rinse them under hot water, place them in a bowl, cover with hot water, and let them sit for 5 minutes. Alternatively, boil them for 1 minute, then drain. If using canned peas, simply drain them. Top the lentil puree with the peas and fresh parsley, then sprinkle with ground black pepper.
