Nutritional Yeast
Nutritional yeast (often called “nooch”) is a deactivated yeast with a naturally savory, cheesy, nutty flavor. It’s a plant-based umami booster that sprinkles easily over bowls, pastas, salads, and popcorn, and blends into creamy sauces, dressings, and dips.
Nutrition
One tablespoon (~5 g) contains:
✓ ~2–3 g protein with all essential amino acids;
✓ Fiber (including beta-glucans);
✓ B vitamins—often including B12 in fortified varieties (check the label);
✓ Trace minerals like zinc and selenium.
Nutritional yeast is low in fat and sugar and delivers big flavor in small amounts.
Health Benefits
As a concentrated seasoning, nutritional yeast helps build savory depth without lots of salt or oil. Its proteins and fibers support fullness, and B vitamins support normal energy metabolism. Fortified versions can help cover B12 intake in plant-based diets - always verify on the package.
Fortified vs. Unfortified
Fortified: Vitamins (often B12, sometimes others) are added. Flavor is similar; check the nutrition panel for amounts.
Unfortified: No added vitamins - choose this if you prefer minimal processing. Still a great umami seasoning.
How to Use
- Sprinkle: Over pasta, bowls, soups, salads, and roasted veg for instant “parmesan-like” savoriness.
- Blend: Whisk into sauces and dressings with lemon, mustard, and garlic; or blend with plant milk, miso, and cooked veg (e.g., potato or cauliflower) for a silky cheese-style sauce.
- Season: Mix into burger patties, tofu scrambles, breading, or popcorn seasoning for deeper flavor.
Flavor Pairings
Excellent with garlic, onion, lemon, mustard, smoked paprika, tomato paste, miso, tahini, soy/tamari, and herbs. A splash of acid (lemon/vinegar) brightens and makes sauces taste “cheesier.”
Storage
Unopened: Store in a cool, dark cupboard.
Opened: Keep airtight and dry to protect flavor and vitamins. Use within a few months for best aroma.
Can You Freeze Nutritional Yeast?
Yes. Freezing airtight can extend freshness and protect vitamins. Bring to room temperature before opening the container to avoid condensation.
What Do We Use?
At DAREBEETS, we keep nutritional yeast for quick, dairy-free “cheesy” depth. We sprinkle it over bowls and pasta, whisk it into lemon-mustard dressings, and blend it into creamy sauces for casseroles and bakes.
