Maple Syrup

Maple syrup is a pure, tree-tapped sweetener with a warm, caramel-vanilla flavor. It dissolves instantly and works in dressings, glazes, sauces, oat bowls, pancakes, bakes, and even savory dishes where a touch of sweetness balances acidity and heat.

One tablespoon (~15 ml) contains:

✓ Small amounts of manganese and zinc (varies by grade);
✓ No fat, negligible protein;
✓ A flavorful alternative to refined sugar - still an added sugar, so use moderately.

Maple syrup’s strong flavor means you can often use less sweetener overall.

Health Notes

Compared to plain sugar, maple syrup contributes trace minerals and polyphenols, but it remains a concentrated sweetener. Use in small amounts to round flavors, not to make dishes very sweet.

Grades & Flavor

Grade A – Golden, Delicate Taste: Light color, subtle flavor - great for drizzling and light dressings.

Grade A – Amber, Rich Taste: Balanced maple character - good all-purpose choice.

Grade A – Dark, Robust Taste: Stronger maple flavor - ideal for baking, glazes, and sauces.

Grade A – Very Dark, Strong Taste: Bold and intense - best where maple needs to shine through other flavors.

How to Use

  1. Dressings & sauces: Whisk with mustard, vinegar or lemon, garlic, and a pinch of salt for instant balance.
  2. Glazes: Reduce gently with soy/tamari, chili, ginger, or citrus for veggies, tofu, and tray bakes.
  3. Baking: Start with about 3/4 cup maple syrup for every 1 cup sugar in a recipe and reduce other liquids by ~3 tbsp per cup syrup. Check for browning a bit earlier.

Label Tips

Choose 100% pure maple syrup. Avoid “pancake syrup” or blends (often corn syrup + flavor). Color indicates flavor intensity, not quality—pick based on use.

Storage

Unopened: Cool, dark cupboard.
Opened: Refrigerate tightly sealed to prevent mold and preserve flavor. If crystals form, warm gently and stir.

Can You Freeze Maple Syrup?

Yes. Maple syrup freezes well and stays scoopable/ pourable due to its sugar content. Freeze in a sealed container for long-term storage; thaw in the fridge.
