Canned coconut milk is thick, rich, and ideal for cooking or baking, while carton coconut milk (sold as a beverage) is lighter and better for smoothies or drinks. Light versions are diluted and lower in fat. Always shake canned coconut milk well before using.
How to Prepare

Storage
Unopened cans or cartons can be kept in a cool, dry pantry for up to a year. Once opened, transfer the contents to an airtight container and refrigerate. Use within 3–4 days for best freshness. The fat may separate when chilled, but stirring or gently warming will restore the texture.
Can You Freeze It?
Yes. Coconut milk can be frozen in ice cube trays or small containers for up to 3 months. Thaw in the fridge and whisk before using. The texture may separate slightly, but it’s still excellent for cooking or smoothies.
