Cocoa Powder
Cocoa powder is the unsweetened, concentrated essence of cocoa beans. It delivers deep chocolate flavor to smoothies, oats, brownies, cookies, pancakes, sauces, and hot drinks without added sugar or extra fat. A spoonful adds rich aroma and color to both sweet and savory recipes.

One tablespoon unsweetened cocoa (~5 g) contains:
✓ ~12 kcal with ~1 g fiber and ~1 g protein;
✓ Small amounts of iron, magnesium, copper, and potassium;
✓ Cocoa polyphenols (flavanols) that contribute antioxidant activity;
✓ Virtually no sugar and very little fat compared to chocolate bars.

Health Notes
Cocoa’s flavanols support everyday antioxidant defenses and may enhance perceived richness, helping you use less sugar. Pairing cocoa with a little healthy fat (nut butters, tahini) improves mouthfeel and flavor carry.
Natural vs. Dutch-Processed (Alkalized)
Natural Cocoa (regular/unsweetened): Lighter color, fruitier/chocolatey tang, naturally acidic. Works especially well with baking soda in quick breads and cookies.
Dutch-Processed: Treated to reduce acidity; darker color, smoother flavor. Typically pairs with baking powder or neutral recipes.
How to Use
- Bloom the cocoa: Stir into a little hot water, coffee, or oil to dissolve and unlock aroma before adding to batter or sauce.
- Baking: Match the leavener - natural cocoa with baking soda; Dutch-processed with baking powder (or follow recipe specifics).
- Drinks & sauces: Whisk into hot plant milk or simmer with a splash of coffee, maple/agave, and a pinch of salt/vanilla for balance.
Label Tips
Choose 100% unsweetened cocoa powder. If a package is alkalized it will usually say “Dutch-processed/alkalized.” Avoid cocoa mixes with added sugar unless you want a ready-to-drink blend.
Storage
Unopened/Opened: Store airtight in a cool, dark cupboard away from humidity and odors. Use a dry spoon to prevent clumping. Best flavor within 6–12 months after opening.
Can You Freeze Cocoa Powder?
Not necessary. If you do, keep it tightly sealed and let it return to room temperature before opening to prevent moisture condensation.
