How to Make Avocado Mayo

Avocado is rich in magnesium, vitamins B6, C, E, and folate. It also provides healthy fats and fiber. To extend its use over several days, consider turning it into a creamy avocado mayo. This versatile spread works well on sandwiches, veggie patties, and salads.

To make avocado mayo, simply blend a pitted and peeled avocado with an equal amount of water. For a small avocado (~120 g or 4 oz), use 120 ml (½ cup) of water. Add a teaspoon of vinegar and ¼ teaspoon of salt for flavor. The following recipe yields 240 ml of avocado mayonnaise.

Ingredients: 
120 g ~ 4 oz ~ 1 small avocado
120 ml ~ ½ cup water
1 tsp vinegar, any type
¼ tsp salt

Instructions:
1. Add all of the ingredients to a blender. You can use an immersion blender, a mini food processor or even a whisk with a very ripe avocado. 
2. Blend - or whisk, until smooth ~ 60 seconds. Place in a tupperware and keep in the fridge for up to 4 days. Use as needed.
